- 1 lb. boneless skinless chicken thighs
- 1/2 Tbsp. salt
- 1/2 Tbsp. garlic powder
- 1/2 tsp. paprika
- 1/2 tsp. black pepper
- 1/4 tsp. ground nutmeg
- 1 Tbsp. olive oil
- 1/2 cup dry white wine (I used Sauvignon Blanc)
- 1 cup low sodium chicken broth
- 1 butter (pat of)
- 1 lime (plus more for garnish)
- 1/2 bunch cilantro stems (removed, chopped)

Directions
- Preheat oven to 375 degrees.
- In a small bowl, combine all the spices. Rub over both sides of the chicken thighs, and set aside.
- Heat olive oil in cast iron skillet over medium heat. When oil is hot, brown chicken thighs on both sides, about 2-3 minutes per side. Remove the chicken and set aside.
