- 6 cups rice (cooked, dried, jasmine, white, brown, simply cook your desired rice according to its package instructions and then spread out on cookie sheet and let dry for as long as possible or up to 6-8 hours, either in the fridge or on your counter.)
- 1 cup scallions (just the white onion part, chopped)
- 1/2 cup bean sprouts
- 6 Tbsp. canola oil
- 4 tsp. sesame oil
- 4 tsp. mirin
- 7 Tbsp. soy sauce
- 1 tsp. ground black pepper
- 1 1/2 Tbsp. chopped garlic
- 1/2 tsp. kosher salt
- 1 Tbsp. lemon zest (fresh)
- 1 cup chopped cilantro (additional for garnish, optional)
