Description
Cooked until tender in cinnamon spiced cider, these cider pears pair perfectly with creamy vanilla custard in this recipe for Cider Pears with Custard. An ideal dessert for the fall season, this delicious pear dessert is gluten free. To serve, top each pear with a dollop of sweet vanilla custard and drizzle with the leftover cider syrup. Use whole vanilla bean as opposed to vanilla extract to get the best vanilla flavor in the custard.

- 4 pears (firm, peeled, cored, and seeded)
- 900 mL cider (aparkling, or cava wine)
- 70 grams sugar
- 1 stick canela
- 3 egg yolks
- 300 grams milk
- 50 grams sugar
- vanilla beans (from 1 pod)

Directions
- Whisk the yolks, sugar, milk, and vanilla beans together and place in a saucepan on low heat, stirring constantly until thick enough to coat the back of a wooden spoon. Cover with plastic wrap directly touching the surface and set aside.
- Place the pears into a saucepan along with thte cider, sugar, and cinamon. Bring to a boil and simmer for 30 minutes, or until tender. Let cool in the syrup.
- Remove the pears from the syrup and cook the syrup to reduce and thicken.
- Serve with the syrup and custard on the side.
