This is a very nice soup - a nice variation from a traditional basil seasoned tomato soup. The Parmesan garnish is a must as it adds another yummy dimension to the overall flavor. This is just what I needed to help consume an abundance of garden fresh oregano. I used Italian oregano this time next time I’ll try the Greek oregano.
