- 2 lb. chicken (this was 3 chicken breasts)
- 2 Tbsp. butter
- 3 cloves garlic (minced)
- 1/2 cup onion (roughly chopped)
- 1/2 cup celery (thinly sliced)
- 3 Tbsp. jalapenos (chopped, or green chiles, use what you like for the amount of heat you prefer)
- 2 cups frozen corn
- 2 cups chicken broth (I used Better Than Bouillon to make a quick broth, so I added no additional salt as noted below)
- 2 Tbsp. arrowroot (or cornstarch)
- 1/2 tsp. chili powder (adjust to taste, I kept this fairly mild to please the whole family)
- 1/2 tsp. dried thyme
- 1/2 tsp. cracked pepper (fresh)
- 1 tsp. kosher salt (only if needed)
- 1 bay leaf
- 3 cups milk
