- 1 tsp. belacan (roasted, see note)

- 1 lemongrass stalk (bruised and cut into 3 pieces)
- 1 star anise
- 450 grams potatoes (about 3 small sebago, quartered)
- 250 mL coconut milk ((1 cup))
- 1 sprig fresh curry leaves
- 3 tsp. palm sugar (grated, or to taste)

- 1 pineapple (ripe, about 1kg, cut into 2cm pieces)

- 1 Tbsp. coriander seeds
- 1 tsp. fennel seeds
- 1/2 tsp. cumin seeds
- 2 cloves
- 2 cardamom pods (bruised)
- 4 red chillies (dried, coarsely chopped)
- 1 tsp. white peppercorns
- 1 tsp. ground turmeric
