  • 1/2 cup corn starch
  • 1/4 cup hot chili powder (ideally Chimayo)
  • 1 stick butter (or margarine)
  • 1 cup finely chopped onion (chopped to almost mush in food processor)
  • 4 cloves garlic (pressed)
  • 1 teaspoon black pepper
  • 5 1/2 tablespoons mustard powder (ground dry)
  • 1 teaspoon dried oregano
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon dried sage
  • 3 cans chicken broth
  • 12 ounces tomato paste
  • 1 1/2 cups green chiles (mild, hot, or a combination - see notes)
  • 1 1/2 cups jalapenos (canned, 12 oz jar or can, not pickled, diced)
  • 2 cups water
  • 1 cup flour
  • 3 tablespoons chicken bouillon
  • 2 tablespoons Cholula Hot Sauce
