- 3 granny smith apples (medium, 1 1/4 pounds total, peeled, cored, cut into 1/2-inch cubes, about 4 cups)
- 2 bartlett pears (or firm but ripe medium Anjou, about 18 ounces, peeled, cored, cut into 1/2-inch cubes, about 2 1/2 cups)
- 1 cup dried fruit (assorted moist plump, such as raisins, cherries, and diced apricots)
- 7 Tbsp. orange marmalade (divided)
- 4 Tbsp. sugar (divided)
- 1 tsp. peeled fresh ginger (finely grated)
- 3/4 tsp. ground ginger

I love this recipe, and have made it several times. The crust is an imperfect beautiful thing and delicious even though I have to substitue regular shortening for the refrigerated kind called for. ( I can' t find it where I live. )
I have done it without the pears. Just as good. I prefer dried cherries and apricots. Sometimes the juices get away if I'm not careful to pinch any accidental holes in the crust, and it makes a little mess, but who cares . This is my favorite pie.
oh, and I have substutited other preserves for marmalade. Apricot and raspberry are wonderful.
