- 1 onion (large, diced)
- 4 oz. pancetta (cut into bite sized pieces)
- 2 oz. butter (1/4 cup, ½ stick)
- 2 1/2 Tbsp. flour
- 16 oz. milk
- 12 oz. water
- 1 1/2 tsp. sea salt (or Kosher)
- 1 tsp. chicken (bouillion, low sodium Better than Bouillion is what I prefer)
- 2 potatoes (medium sized, diced)
- 2 cans clams (chopped, liquid and clams separated)
- freshly ground pepper
- 3 sprigs fresh parsley (chopped, and more to garnish, if desired)
- 6 sourdough bread (small, boules)
