  • 1 tablespoon olive oil
  • 2 chorizo sausages (sliced)
  • 14 ounces diced tomatoes
  • 10 7/8 ounces corn kernels (drained, rinsed)
  • 1 clove garlic (minced)
  • 1 red chili (small, finely chopped)
  • 1/4 teaspoon cayenne pepper
  • 2 tablespoons flat leaf parsley (chopped)
  • 8 slices ciabatta bread (toasted)

    Directions

    1. Heat oil in a skillet on high. Sauté chorizo, 1 min.
    2. Stir in tomatoes, corn, garlic, chili, and cayenne pepper. Cook, stirring, 1–2 mins or until hot. Season to taste.
    3. Stir in parsley and spoon onto toasted ciabatta.
