Description
This Spanish rice is bursting with flavor and just the right amount of spicy. Featuring chorizo sausage, fresh or canned, this rice also features diced red and green bell peppers. The rice is cooked alongside everything else for a Spanish rice that is bursting with flavor with every bite. This makes a great side dish or can easily become an entree when wrapped up in freshly made or warmed tortillas.
Ingredients

- 300 grams paella rice
- 1/2 onion (small, chopped)
- 1/4 red bell pepper
- 1/4 green bell pepper
- 1 Tbsp. frozen peas
- 1 clove garlic (chopped)
- 200 mL tomato sauce
- 8 lard (–10 tinned chorizos in, may substitute with fresh chorizo)
- 1 chicken stock
- oil
- salt

Directions
- Remove the chorizos from the tin and set aside the lard.
- Heat the stock in a pan.
- In a paella pan, heat the lard (or use a drizzle of oil if using fresh chorizo). Fry the onion and peppers on a low heat until soft.
