- 1 lb. pork leg (cut into wafers abut 1x1 1/2 inches and 1/8 inch thick)
- 8 oz. fresh pork fat (cut into strips, 1/2 x 1 1/2 inches and 1/8 inch thick)
- 1 Tbsp. rendered fat (or vegetable oil)
- 1 Tbsp. fish sauce
- 1 Tbsp. oyster sauce
- 2 Tbsp. palm sugar (light brown, grated)
- 2 Tbsp. shallots (pounded or minced)
- 1 Tbsp. garlic (pounded or minced)
- 1/4 cup lemon grass (minced)
- 12 inches banana leaves (square, blanched, pulled into strip 1/4 inch wide)
- 1 cup granulated sugar (combined with 1/2 cup water)
- 2 tsp. black pepper (coarsely grated)
- 1/4 cup water
- 1/2 cup coconut milk
- 1 tsp. fish sauce

Directions
- Massage all ingredients into pork. Marinate at least 1 hour.
- Slip pork in between split skewers, alternating meat and fat.
- Tie end with banana leaf securing tight in between end and tie knot to secure
