- 1 large egg yolk
- 1 tsp. ice water
- 125 grams hazelnuts (4.5 oz)
- 225 grams caster sugar (1 cup + 2tbsp)
- 25 mL water (1.5 tbsp)
- 180 mL whipping cream (3/4 cup)
- 15 grams butter (1 tbsp)
- 1/3 tsp. flaky sea salt
- 80 grams waffle cones (3 oz, crushed into small pieces or feuilletine)
- 100 grams milk chocolate (3.5 oz, chopped, I used Lindt)
- 125 grams dark chocolate (4.5 oz, chopped, I used Lindt 70%)
- 60 mL full-fat milk (1/4 cup)
- 125 mL whipping cream (1/2 cup)
- 1/2 tsp. vanilla bean paste
- 45 grams egg yolks (about 2 large/3 small)
- 25 grams caster sugar (2 tbsp)
- 15 grams butter (1 tbsp)
- cocoa powder (for dusting)
