- 250 grams sweet potato (peeled and cut into small chunks)
- 100 grams vegan chocolate (dark, chopped)
- 125 grams vegan butter (or margarine)
- 150 grams sugar (I used coconut sugar, brown sugar works too)
- 2 eggs (chia, for one chia egg mix 1 tbsp chia seeds with 3 tbsp water and set aside for 5 minutes, it will turn into a ‘jelly’ texture)
- 175 grams flour (I used spelt flour)
- 1 tsp. baking powder
- 1 pinch salt
- 100 grams chocolate chips
- 100 grams vegan chocolate (dark, melted)
- 100 grams coconut milk (from a tin, only the thick bit from the top)
