- 1 cup light brown sugar (packed)
- 1/2 cup all purpose flour (not packed!)
- 3/4 cup unsweetened cocoa powder (sifted)
- 3 tsp. baking soda
- 1/2 tsp. baking powder
- 1 tsp. salt
- 1 tsp. ground cinnamon
- 3 large eggs (+ 2 large egg yolks, at room temperature)
- 2 cups shredded zucchini (coarsely, packed and NOT drained, see post for more on this)
- 1 cup plain greek yogurt (full-fat)
- 3/4 cup vegetable oil (you may also sub in melted coconut oil)
- 2 tsp. vanilla extract
- 1/2 cup hot water
- 1 cup unsalted butter (2 sticks, 8 ounces, VERY soft)
- 1/2 cup confectioners sugar (sifted)
- 6 oz. semi sweet chocolate (melted and cooled for 10 minutes)
- 1 tsp. vanilla extract
- 1/2 tsp. salt
- 2 Tbsp. heavy cream (more only if needed)
