- 1/4 cup hazelnut meal (you can grind your own from raw hazelnuts)
- 1/4 cup cacao powder
- 1 tsp. soda (bicarb)
- 1 pinch fine salt
- 1 Tbsp. ground cinnamon
- 5 eggs (good quality)
- 1/3 cup malt syrup (rice, you can use honey or maple syrup if you prefer, this will yield a sweeter muffin but will mean the muffins are no longer fructose-free)
- 1 cup pumpkin (cooked until very soft)
- 3 Tbsp. coconut oil
- 1 Tbsp. vanilla extract
- 3/4 cup roasted hazelnuts (roughly chopped)
