- 2 oz. dark chocolate (60g ,finely chopped)
- 1/4 cup hot water (very)
- 1 Tbsp. brandy (if omitted, increase vanilla to 1 tablespoon)
- 1 tsp. vanilla extract
- 1 large egg
- 1 large egg yolk (save the white for the buttercream!)
- 1/2 cup buttermilk
- 1/3 cup vegetable oil
- 4 large egg whites (120g)
- 1 cup granulated sugar (200g)
- 1/4 cup maraschino syrup (strained from a jar of maraschino cherries)
- 1 pinch salt
- 1 1/2 cups unsalted butter (3 sticks ,at cool room temperature, 68 degrees, cut into 1-inch pieces)
- 1 Tbsp. vanilla extract
- 1/2 tsp. almond extract
- 1 Tbsp. brandy
- 3 oz. dark chocolate (85g ,melted and cooled to lukewarm)
