Good basic fudge recipe, but it's not really clear when it comes to beating the mixture. I found that I got better results beating with a whisk attachment (rather than the suggested paddle attachment) on my kitchen aid for nearly 20 minutes (as opposed to the 3-8 the recipe suggests). Before making the fudge it's worth watching a few YouTube videos to understand how the consistency of the mixture changes when beating it, otherwise you run the risk of under doing it and it won't set up properly.
