- 1 1/2 tsp. baking soda
- 1/4 tsp. salt
- 1 tsp. ground cinnamon
- 2 large eggs (room temperature)
- 1/2 cup coconut oil (room temperature)
- 1 tsp. vanilla extract
- 1/4 cup brown sugar
- 1/4 cup granulated sugar
- 3 bananas (medium/large-sized ripe, peeled)
- 8 oz. baby spinach (fresh, pureed as smooth as possible and squeezed of excess liquid)
- 1/2 cup chocolate chips
- 1/2 cup toasted coconut (you can toast your own or you can leave the coconut untoasted: sweetened or unsweetened coconut will work: just remember sweetened coconut adds more sweetness to the recipe!)
