This recipe is based on a sweet-enough muffin formula that needs an adjustment... 2tsp baking soda assumes a more acidic batter. Made as the recipe is written, the muffins have a salty tinge to them. I use yoghurt instead of milk or reduce the soda to 1/2 tsp (pumpkin is only slightly acidic) and added 2 tsp baking powder for "lift" without the weird taste). Baking is chemistry, after all!
