Different and healthy cookies. A little moister than I normally make. Will try adding a minute or so to crisp them a bit or more oatmeal.
Taste and texture also different. Honey adds a different flavor, It almost is asking for an addition of a savory or spicy herb to add a dimension to the cookie. The texture would benefit from nuts, pumpkin seed, or flax.
That said adding more dry ingredients would throw off the chemical balance so you might have to add other good stuff to make it work.
I might also add raisins or cranberries for more chewy goodness.

These were pretty good, they were a bit dry but not too bad. It didn't seem like a cookie because they were a bit soft and kind of like a bread. They spread a lot and the cookies turned into one giant blob. Might make these again
