It ended up being a dry and heavy bread. It wasn’t moist at all unless microwaved.

Delicious! I was short one banana, so I added another cup of shredded zucchini. Super moist.

This bread turned out great! I tweaked it a little bit. I used yellow squash instead of zucchini but I'd say the two taste pretty much the same in the bread. I also used mostly coconut oil instead of only canola. And I sprinkled some chocolate chips on top after I put it in the loaf pan to make it look prettier!
