- 1/2 cup chestnut flour
- 1/4 cup white rice flour (sweet, mochiko)
- 2 Tbsp. tapioca flour
- 1/2 cup cane sugar (plus tablespoon, organic blonde, plus another 3 tablespoons, 1.25 ounces / 35 grams)
- 1 1/2 tsp. baking powder
- 1/2 tsp. fine sea salt
- 3 large egg yolks
- 2 large eggs
- 1 1/2 tsp. vanilla extract
- 1 1/2 tsp. chocolate extract (optional)
- 1/4 cup sunflower oil (plus tablespoon, or other neutral oil)
- 1/2 cup water (plus tablespoon)
- 5 large egg whites (6.5 ounces / 90 grams)
- 1/2 tsp. cream of tartar
- 3/4 cup brewed coffee (double-strength, or espresso, I use decaf)
- 2 Tbsp. sugar
- 1/2 cup dark rum (such as The Kraken)
- 8 oz. chestnut cream (such as Perrotta)
- 8 oz. mascarpone
- 1 vanilla bean (seeds, or a teaspoon vanilla extract)
- 1 pinch salt
- 1 1/4 cups heavy cream
- 1 Tbsp. sugar
- 2 Tbsp. dark rum
- 1/3 cup bittersweet chocolate (shaved)
- 2 Tbsp. cacao nibs
