Modifications-using maraschino cherries. Drain cherries until dry, reserving juice. Chop 1 cup drained cherries. Heat cherry juice in pan over med low heat to reduce to a syrup that will coat a spoon. Let cool. Use 1 tsp in place of cherry flavoring. These mods will require significantly more powdered sugar-keep adding until handling consistency is reached. We refrigerate to facilitate rolling into logs, then refrigerate the logs. Prepare mini cups: into mini muffin pans, place mini muffin cups. Melt chocolate and put melted chocolate into muffin cups to cover bottoms. To roll centers: cut roll and drop directly into a bowl of powdered sugar. Use powdered sugar to help form ball. Place balls into chocolated cups. Cover with melted chocolate. We have made these several times with great success.
