- 3/4 cup sugar (150 grams)
- 1/3 cup cake flour (40 grams, spoon flour into dry-measure cup and level off)
- 1/3 cup cornstarch (37 grams)
- 1/4 cup cocoa powder (23 grams)
- 1/4 cup cherry juice (60 ml, morello)
- 2 Tbsp. amaretto liqueur
- 3 egg whites
- 3 oz. sugar
- 12 Tbsp. unsalted butter (12 tablespoons/170 grams, softened but still cool)
- 3 oz. milk chocolate (melted and slightly cooled, I used Guittard)
- 2 oz. bittersweet chocolate (or semi-sweet, melted and slightly cooled)
- 1 tsp. vanilla extract
- 1 tsp. almond extract
- 2 1/4 cups morello cherries (or fresh cherries cut in half)
