- 1 cup buttermilk (shaken and at room temperature)
- 1/2 cup vegetable oil
- 2 extra-large eggs (at room temperature)
- 1 tsp. pure vanilla extract
- 1 cup hot coffee (freshly brewed, or 2/3 cup coffee mixed with 1/3 cup of water)
- 1 cup unsalted butter (softened)
- 1 cup smooth peanut butter (don't use natural - I used JIF)
- 1 1/2 cups confectioners sugar
- 1/4 tsp. salt
- 1/2 tsp. vanilla extract
- 2 Tbsp. heavy cream (or milk)
