- 250 grams white chocolate (good quality, finely chopped)
- 200 grams unsalted butter (diced)
- 150 mL whole milk
- 50 mL baileys (Original Irish Cream, or another Irish cream liqueur)
- 220 grams caster sugar
- 1 1/2 tsp. vanilla bean paste
- 3 free range eggs (medium, lightly beaten)
- 300 grams plain flour
- 2 tsp. baking powder
- 1/2 tsp. grated nutmeg
- gold leaf (optional)
- milk chocolate (optional)
- 400 grams milk chocolate (good quality, finely chopped)
- 200 mL double cream
- 4 Tbsp. baileys (Original Irish Cream, or another Irish cream liqueur)
- 370 grams unsalted butter (cut into 2cm cubes, at room temperature)
- 500 grams icing sugar (sifted)
- 500 grams mascarpone (at room temperature)
- 1 tsp. vanilla extract
- 3 Tbsp. espresso powder (dissolved in 1½ tbsp boiling water, cooled)
- 2 Cake (x 20cm round, tins, greased with butter and lined)
