- 1 1/2 cups gluten-free rolled oats (we used Bob's Red Mill certified organic oats)
- 1 cup yoghurt (plain, Greek yoghurt or coconut yoghurt both work well)
- 2 eggs
- 2 bananas (ripe, chopped)
- 1/3 cup buckwheat flour
- 1/3 cup dark chocolate (chopped, 70% - 85%)
- 1/4 cup cacao powder
- 1/3 cup blueberries
- 1/4 cup coconut sugar (we chose to reduce this to 1 tablespoon as we don't have a sweet tooth here at THI)
- 1 1/2 tsp. baking powder
- 1 tsp. vanilla extract
- 1/2 tsp. baking soda
- 1 pinch sea salt
