- 1/2 cup canola oil (for frying)
- 12 corn tortillas (– 18, preferably white)
- 1 white onion (medium, diced)
- 1 1/2 cups cheese (shredded, preferably Enchilado or Muenster)
- 1/2 cup sour cream (or crema Mexicana, for topping)
