- 2 garlic cloves (grated on a microplane or very finely minced)
- 1 pepper (dried guajillo)
- 2 cups masa harina (corn flour)

- 2 Tbsp. grapeseed oil (plus 2 teaspoons, or any neutral flavoured oil)
- 1/4 cup greek yogurt
- 2 Tbsp. mayo

- 1 garlic clove (small, grated on a Microplane or very finely minced)
- 1 pinch sea salt
- 1/2 squash (chayote, julienned into 2-3 inch strips)

- 1/2 cup red cabbage (finely shredded)
- 1/4 cup red onion (finely sliced)
- 2 Tbsp. cilantro (chopped)
