- 1/4 cup flour
- 3 cups milk
- 2 cups colby jack cheese (shredded)
- 7 oz. chipotle peppers in adobo sauce
- 1 lb. shrimp (peeled and deveined)
- salt
- pepper
- 1 large tomato (diced)
- 1 avocado (large, ripe but firm, diced)
- 2 tsp. garlic powder
- 2 tsp. kosher salt
- 2 tsp. paprika (use smoked paprika if possible!)
- 1 tsp. onion powder
- 1 tsp. ground cumin
- 1 tsp. chili powder
- 1 tsp. black pepper
- 1 tsp. oregano
- 1 tsp. thyme
- 1/2 tsp. cayenne pepper (to taste)
