- 1 chipotle (in adobo minced)

- 2 tsp. smoked paprika
- 1 tsp. cumin
- 2 Tbsp. apple cider vinegar
- 1 Tbsp. maple syrup
- 1/2 tsp. sea salt
- 8 taco shells (corn)
- salsa (Pico, recipe below)
- sour cream (Classic, see recipe or store bought plant-based sour cream of choice)
- avocado (diced)
- green onions (sliced)
- lime wedges
- 4 tomatoes (large, seeded and diced)
- 1/2 jalapeno (seeded and diced, leave the seeds in if you like the spice)
- 3 Tbsp. red onion (diced)
- 2 Tbsp. cilantro (chopped)
- 1/2 lime (juiced)
- 1 pinch sea salt (optional)
