- 16 corn tortillas (4 inch)
- 2 Tbsp. olive oil (/avocado oil OR olive oil/avocado mist spray or mist)
- pickled onions (for serving)
- fresh cilantro (for serving)
- tomatoes (for serving)
- shredded lettuce (for serving)
- 1 avocado (chopped)
- 1 cup cooked corn
- 2 Tbsp. chopped cilantro
- 2 Tbsp. lime juice

- 1/3 cup Sour Cream (or plain greek yogurt)
- 3 Tbsp. fresh lime juice
- 2 Tbsp. adobo sauce
