Description
These tasty veggie burgers feature black beans, walnuts, and oats for a hearty and satisfying meal. - 1 can black beans (15.25 oz. per can)
- 1/2 cup walnuts (halves and pieces)
- 1/2 cup old-fashioned rolled oats
- 2 green onions
- 1 Tbsp. maple syrup
- 2 tsp. chipotle chilies (in adobo, finely chopped, divided, plus more to taste)
- 1 tsp. ground cumin
- 3/4 tsp. salt
- 1 small avocado
- 1 medium tomato
- 1/4 cup extra-virgin olive oil
- 4 hamburger buns (split)
- 1/2 cup mayonnaise
- 4 lettuce leaves (or 8 small leaves)

Directions
- Drain beans in a strainer and rinse with cold water. Pour beans onto a plate and thoroughly pat dry with paper towels to remove all excess moisture. Set aside.
- Put walnuts and oats in a food processor and whirl until well chopped.
- Coarsely chop green onions with a knife and add them to the processor along with maple syrup, 1 tsp. chipotle chilies, the cumin, and salt. Add black beans and pulse until everything comes together, 10-12 one-second pulses (you will still see a few whole black beans in the mix, which will add texture). Taste and stir in a little more chipotle chili if you’d like spicier burgers.
