- 200 mL cola (bottles Fever-Tree Distillers)
- sea salt
- 1 Tbsp. vegetable oil
- 1 brown onion (sliced)
- 4 cms ginger (1.5” piece, thinly sliced)
- 1/2 cup soy sauce
- 1/3 cup Shaoxing wine (Chinese)
- 1/4 cup dark brown sugar
- 1 cinnamon stick
- 1/4 tsp. ground nutmeg (or finely grated)
- 4 whole cloves
- 2 bay leaves
- 4 strips orange rind
- mint (and coriander, cilantro leaves, to serve)
- steamed rice (to serve)
- 2 red chillies (long, finely sliced)
- 3 Tbsp. white vinegar
- 1 Tbsp. white sugar
- 1 tsp. sea salt
