- 3 oz. ground pork (optional; can also be substituted with ground chicken, beef, or turkey)
- 1/2 tsp. salt
- 1/4 tsp. sugar
- 1/8 tsp. white pepper
- 1 tsp. sesame oil
- 1 Tbsp. vegetable oil (plus 3 tablespoons, divided)
- 1 tsp. Shaoxing rice wine (or dry sherry)
- 1 egg
- 1 tsp. cornstarch
- 2 scallions (finely chopped, divide half for the filling and half for the sauce/garnish, optional)
- 4 eggplants (medium Chinese/Japanese purple)
- 1 tsp. oil
- 1/2 tsp. sesame oil
- 1 clove garlic (minced)
- 1 cup chicken stock
- 1 Tbsp. oyster sauce
- 1 tsp. soy sauce
- 1 pinch sugar
- 2 Tbsp. cornstarch (mixed into a slurry with 2 tablespoons water)
