Chinese Mince Pork with Vegetables

Description

Easy, quick and nutritious, it is delicious when served with noodles or rice, I always make slightly more than required then have the rest cold the next day for lunch. As with most Chinese food once the prep is done the rest is a doddle.

Ingredients

  • 500 minced pork (grms free range)
  • 6 spring onions (scallions slices in 1 cm pieces on an angle)
  • 2 inches fresh ginger (finely chopped)
  • 3 cloves garlic (finely chopped)
  • 1 red chilli (medium, finely chopped)
  • 2 tablespoons peanut oil (or rapeseed oil)
  • 1 bunch fresh basil (Thai basil if you can get it)
  • 1/2 teaspoon brown sugar (or palm sugar)
  • 1/2 chestnut mushrooms (pack of, cut into 6ths)
  • 2 tablespoons rice wine (or dry sherry)
  • 2 tablespoons soy sauce
  • 2 tablespoons water
  • 2 pak choi
  • 1 mangetout (Pack of, or sugar snap peas)
  • 2 tablespoons corriander (chopped, cilantro)
  • black pepper (Good grind)
  • 1 tablespoon oil (sesame seed)
  • peanuts (Top with crushed, or cashews to serve)

    Directions

    1. Add 3/4 of the oil to a hot wok or large non stick frying pan ( a medium to high heat is required)
    2. Throw in the fresh ginger, garlic and chilli and fry for 1 minute before adding the spring onion, fry for a further minute stirring once or twice so it does not stick
    3. Seperate the pork mince then add to the pan and fry for 5 minutes until it starts to brown, stirring so it does not stick. Add the fresh basil, sugar, soy sauce and water and cook for a further 2 minutes.
