- 2 cups forbidden rice (Lotus Foods Organic)
- 3 1/2 cups vegetable stock (or chicken broth for cooking., optional: use water instead of broth)
- 1 can kidney beans (BPA-free can, 15 oz.)
- 1 can pinto beans (BPA-free can, 15 oz.)
- 2 cups beans (total of cooked, – feel free to soak and cook your own beans, however, the canned beans cut down on the prep time for this recipe)
- 2 Tbsp. extra virgin olive oil (or coconut oil)
- 1 yellow onion (medium sweet, diced)
- 1 medium sweet potato (peeled and diced)
- 2 stalks celery (diced)
- 1/2 jalapeno (seeded and finely minced)
- 4 cloves garlic (finely minced)
- 2 cups vegetable broth (or chicken stock)
- 1 can fire roasted, diced tomatoes
- 1/2 tsp. sea salt (or to desired taste)
- 2 tsp. fresh chopped oregano
- 1 tsp. ground cumin
- 1 tsp. smoked paprika
- 2 tsp. chili powder (Optional: add 1 extra tsp if you love heat)
- 1 Tbsp. honey (or maple syrup, I like a quick of sweetness to balance out the acidity in the tomatoes and the jalapeño in this dish)
- goat cheese (as a topping just before serving)
- cilantro (as a garnish, optional)
