With a medley of flavors and textures from fried quinoa, butterfly shrimp, and a homemade quick pickle, Stephanie creates a lively salad inspired by the classic Peruvian salad known as solterito.

- 1/2 large red onion
- 1 Persian cucumber (or more if desired)
- 2 Fresno chilies
- salt (for blanching)
- 1 cup green beans
- 3 Heirloom tomatoes (large, or more if desired)
- 2 Tbsp. canola oil (for quinoa)
- 1/2 cup cooked red quinoa
- coarse kosher salt (for quinoa)
- 4 scallions
- 1 cup fresh cilantro leaves (packed, with small stems)
- 2 tsp. brown sugar
- 1/3 cup red wine vinegar
- 1/4 cup tamari
- 1/2 cup light olive oil
- 1 lb. raw large shrimp (shelled and deveined)
- 1 Tbsp. canola oil (for shrimp)
- coarse kosher salt (for shrimp)
- 1 pinch coarse kosher salt (for seasoning tomatoes)
- 1/3 cup fresh blueberries
- fresh mint leaves (torn, for garnish, optional)

this was great! i made it for my family and they have some pretty strict requirements when it comes to diet. this dish not only tastes great but from a nutrition perspective it's very good too
