- 3 Tbsp. coconut oil (or ghee)
- 1 head broccoli (stem cut into cubes, florets cut into 3cm pieces)
- 5 cms ginger (piece, diced)
- 400 grams pumpkin (diced into 2cm pieces, skin on)
- 2 tsp. mustard seeds
- 3 tsp. Garam Masala
- 1 tsp. turmeric
- 60 grams peanuts (roughly chopped)
- 1 red onion (sliced)
- 1 stock cube
- 200 grams tomatoes (baby, halved)
- 100 grams coconut cream (from a can or packet)
- 350 mL hot water
- 2 Tbsp. tomato paste
- 2 tsp. chilli paste (I use the brand chiu chow chilli oil)
- 2 tsp. peanut butter
- 150 grams spinach (roughly chopped)
- 2 limes (juice)
