- 15 grams Flora Buttery
- 1 onion (finely chopped)
- 1 garlic clove (crushed)
- 450 grams carrot (mixed, sweet potato and parsnip, cut into cubes)
- 2 courgettes (thickly sliced)
- 1/2 tsp. chilli powder
- 400 grams chopped tomatoes (can)
- 2 tsp. tomato (purée)
- 410 grams butter beans (can, drained)
- 8 slices french bread
- 40 grams Flora Buttery
- 40 grams cheese (mature, grated)

Directions
- Melt the Flora in a large saucepan and cook the onion and garlic for about 5 minutes, stirring occasionally, until soft.
- Add the carrot, sweet potato and parsnip and cook for about 5 minutes, stirring occasionally.
- Stir in the courgettes, chilli powder, tomatoes, tomato purée and beans. Cover and simmer gently for 15-20 minutes.
- Just before serving, spread one side of each bread slice with Flora and top with the cheese. Grill until bubbling and golden.
- Serve the cheesey toasts with the vegetables.
