- 10 spring onions (chopped)
- 1 chilli (dried chipotle, mashed into flakes, I get mine in bulk from Edible Ornamentals)
- 1 Tbsp. rendered chicken fat
- 70 grams butter (diced)
- 175 mL water
- sea salt flakes (big pinch Halen Môn)
- 120 grams plain flour
- 4 large free range eggs (beaten)
- 100 grams mature cheddar cheese (extra, grated)
- 25 grams grana padano cheese (freshly grated)
- 1 tsp. dried thyme
- 2 tsp. garlic (granules)
- 1 pinch freshly grated nutmeg
- freshly ground black pepper
- 100 mL rendered chicken fat (*, with caraway)
- plain flour (enough to make a roux, approx 1 mug-ish)
- milk (as much as it needs to get the right consistency)
- 2 Tbsp. porcini powder (blitz dried porcini in a coffee grinder)
- 1 tsp. stock (powdered veg, I use Essential Cuisine)
- 50 grams mature cheese (grated extra)
- sea salt
- white pepper
