- 2 lb. tomatoes (halved)
- 6 cloves garlic
- 3 sprigs fresh oregano
- 2 tsp. olive oil
- 1 avocado (ripe, peeled, stoned and quartered)
- 1/2 pt. vegetable stock (cold)
- 1 lime juice (only)
- 1 tomato (de-seeded and finely chopped for garnish, optional)

Directions
- Preheat oven to 400
- Arrange tomatoes, cut side up, in the roasting tin with the garlic cloves and torn oregano leaves scattered over the top. Season, then drizzle over a little olive oil. Roast for 25 minutes.
- Remove from oven and allow to cool.
