- 6 nectarines (firm, yet fragrant, halved and stone removed)

- 6 cups baby arugula (washed and picked over, about 1 cup per guest)
- 1/2 cup slivered almonds (or sliced, gently toasted)
- ice
- water
- vinaigrette (Warm Balsamic Honey, see recipe below)
- 1 shallot (peeled and rough chopped)
- 1 clove garlic (peeled and smashed)
- 3 Tbsp. honey (local, add more if you prefer sweeter)
- 1/4 cup extra-virgin olive oil (good quality, mild flavor)
- 1/3 cup aged balsamic vinegar (good quality)
- salt
- Salt and fresh ground pepper
- 1 cup flat leaf parsley (finely minced)
