- 3 Tbsp. maple syrup
- 1/4 tsp. fine grain sea salt
- 1 1/2 cups rolled oats (divided, gluten-free if necessary)
- 1 1/2 cups cashews (soaked for at least 4 hours)
- 3/4 cup pure maple syrup
- 1/2 cup coconut oil
- 1/3 cup cocoa powder (I used raw cacao powder)
- 1/3 cup dark chocolate chips (melted, I used chopped dark chocolate)
- 2 tsp. pure vanilla extract (I used seeds of ½ vanilla bean)
- 1/2 tsp. fine grain sea salt
- 1/2 tsp. espresso powder (optional)
