- 350 grams pork (ground lean)
- 150 grams mushrooms (your choice, ground in a food processor until crumbly)
- 1 glug olive oil
- 1 onion (finely chopped)
- 2 cloves garlic (finely chopped)
- 1 stalk celery (small dice)
- 2 cups tomato puree
- 3/4 cup chicken stock (or beer but I didn't have any)
- 540 mL black beans (drained and rinsed)
- 1 cup tomatillo salsa (I use the PC brand but use what you have)
- salt
- pepper
- 1 Tbsp. Mexican oregano
- 1 Tbsp. ground cumin
- 1 Tbsp. chili powder
- cilantro
- 1 Tbsp. lime juice
