- 2 yellow onions (chopped)
- 2 jalapeno peppers (diced, ribs and seeds removed)
- 1 small bell pepper (diced, you can use red bell pepper, green, or orange)
- 4 cloves garlic (minced)
- 2 chipotle peppers in adobo sauce
- 1 Tbsp. adobo sauce (chipotle, from the chipotle peppers can)
- 2 Tbsp. tomato paste
- 28 oz. crushed tomatoes
- 6 cups low sodium beef broth
- 12 oz. lager beer
- 2 cans red kidney beans, rinsed and drained (14 ounces each)
- 3 Tbsp. cornstarch
- 4 Tbsp. cold water
