- 2 dried chili (mulato, mild)
- 2 ancho (dried chili, mild)
- 6 dried chili (de arbol, hot,, depending on your heat tolerance)
- 2 chipotle peppers (canned, medium in adobo sauce, reserve the rest for another use)
- 3 cloves garlic
- 2 Tbsp. olive oil
- 2 onions (medium, chopped, about 1 lb)
- 2 lb. lean ground beef
- 1 Tbsp. sweet paprika
- 1 1/2 tsp. ground coriander
- 1 tsp. cumin
- 1 tsp. dried oregano
- 1 tsp. marjoram (dried)
- 1 tsp. fine sea salt
- 1/2 tsp. cinnamon
- 2 jalapeno peppers (seeded and chopped)
- 1 red bell pepper (seeded and chopped)
- 1 green bell pepper (seeded and chopped)
- 28 oz. diced tomatoes
- 1 cup water
- 2 tsp. bouillon (Better than, Beef)
- 1 Tbsp. tomato paste
- 2 oz. mexican chocolate (disk, mine was sweetened, but unsweetened chocolate is really good here too)
- 15 oz. pinto beans (drained and rinsed)
- 2 Tbsp. masa harina (or blending flour)
- sour cream (for serving)
- fresh cilantro (for garnish, optional)

Hard to find all specific chilis/peppers in Asia. Instead I used 2 bellpeppers, one pointy pepper, two finely chopped (asian) chilis, three finely chopped sundried tomatoes and/or lot of brown sugar and chocolate. To fill up added mais corn. Used one whole box of chopped tomatoes instead of puree. Keep it soggy.
