- 2 tsp. ground cinnamon
- 2 tsp. ground black pepper
- 3 lb. bone-in short ribs
- 1/4 cup canola oil
- 4 cloves garlic (peeled)
- 1 Spanish onion (medium, coarsely chopped)
- 2 medium carrots (peeled and coarsely chopped)
- 1 stalk celery (coarsely chopped)
- 1 cup dry red wine
- 4 cups chicken stock (enriched)
- 6 sprigs fresh thyme
