- 1 jalapeño pepper (large, finely diced)
- 4 cloves garlic (minced or pressed through a garlic press)

- 2 cups half & half
- 4 oz. sharp cheddar cheese (grated)
- 4 oz. pepper jack cheese (grated)
- 1/4 tsp. cumin
- 1/4 tsp. salt
- 2 Tbsp. diced tomatoes (finely, use only the flesh, no seeds or juice)
- 1/4 tsp. crushed red pepper flakes (optional for more heat)
- chopped cilantro (Fresh, optional for garnish)

This is the best queso I have ever had! So yummy!
It takes a little more effort than melting processed cheese, but SO worth it!
